Ingredients

1 small onion, finely chopped

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup frozen peas (optional)

8 ounces penne pasta (or pasta of your choice)

Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Cook the Aromatics: In the same skillet, add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
  4. Make the Sauce: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a simmer, then reduce the heat to low and let it cook for 5 minutes, allowing the sauce to thicken.
  5. Add Cheese and Peas: Stir in the grated Parmesan cheese until melted and the sauce is creamy. Add the frozen peas (if using) and cook for another 2-3 minutes.
  6. Combine Pasta and Chicken: Add the cooked pasta and chicken to the skillet, tossing to coat in the sauce. Cook for an additional 2-3 minutes, until everything is heated through.
