Description

A comforting one-pan meal featuring juicy chicken, roasted vegetables, and a creamy, cheesy ranch sauce—all cooked together on a single sheet pan for easy cleanup and a satisfying dinner in under an hour.


Ingredients

1.5 lbs boneless skinless chicken thighs or breasts

1 lb baby potatoes, halved

2 cups baby carrots

1 cup broccoli florets

1/2 cup sour cream

1/4 cup mayonnaise

1/4 cup grated Parmesan cheese

2 teaspoons ranch seasoning mix

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper, to taste

Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat the oven to 425°F (220°C) and lightly grease a large sheet pan.
  2. In a large bowl, mix the sour cream, mayonnaise, Parmesan cheese, and ranch seasoning until smooth.
  3. Coat the chicken in the creamy mixture and set aside.
  4. On the sheet pan, toss the potatoes and carrots with olive oil, garlic powder, salt, and pepper. Spread them out on one half of the pan.
  5. Place the coated chicken on the other half of the pan in a single layer.
  6. Bake for 20 minutes.
  7. Add the broccoli florets to the pan, tucking them between the other ingredients.
  8. Return to the oven and bake for another 10–15 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
  9. Garnish with fresh parsley if desired and serve hot.

Notes

Swap chicken with turkey cutlets or salmon fillets for variation.

Use sweet potatoes instead of baby potatoes for a sweeter flavor.

For a low-carb version, omit the potatoes and use more low-carb veggies like cauliflower and zucchini.

Enhance seasoning with smoked paprika or Italian seasoning.

Top with shredded cheese in the last 5 minutes for extra cheesiness.
