Ingredients

2 large yellow onions, finely chopped

1 tablespoon olive oil

1 tablespoon vegan butter (or regular butter)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

1 cup plain Greek yogurt (or dairy-free yogurt)

1/2 cup vegan or regular mayonnaise

1 teaspoon white wine vinegar

1 teaspoon coconut aminos or low-sodium soy sauce


Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.

  2. Add chopped onions and salt. Cook, stirring often, for 30–40 minutes until onions are golden and caramelized. If the onions begin to dry out, add a splash of water.

  3. Once caramelized, remove from heat and let the onions cool.

  4. In a medium bowl, stir together the yogurt, mayonnaise, onion powder, garlic powder, vinegar, and coconut aminos.

  5. Fold in the cooled caramelized onions and mix until well combined.

  6. Taste and adjust seasoning as needed.

  7. Chill in the refrigerator for at least 1 hour to allow the flavors to meld.

  8. Serve with chips, crackers, or fresh vegetables.

Notes

For a vegan version, use dairy-free yogurt and vegan mayo.

Add hot sauce or cayenne pepper for a spicy kick.

For fresh flavor, stir in herbs like parsley, chives, or dill.

If you prefer, substitute sour cream for the Greek yogurt.
