Ingredients
2 large yellow onions, finely chopped
1 tablespoon olive oil
1 tablespoon vegan butter (or regular butter)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1 cup plain Greek yogurt (or dairy-free yogurt)
1/2 cup vegan or regular mayonnaise
1 teaspoon white wine vinegar
1 teaspoon coconut aminos or low-sodium soy sauce
Instructions

Heat olive oil and butter in a large skillet over medium heat.

Add chopped onions and salt. Cook, stirring often, for 30–40 minutes until onions are golden and caramelized. If the onions begin to dry out, add a splash of water.

Once caramelized, remove from heat and let the onions cool.

In a medium bowl, stir together the yogurt, mayonnaise, onion powder, garlic powder, vinegar, and coconut aminos.

Fold in the cooled caramelized onions and mix until well combined.
