Description

This Creamy Garlic Butter Tuscan Salmon is a restaurant-quality dish that’s quick and easy to make, featuring perfectly seared salmon fillets in a rich garlic butter cream sauce with sun-dried tomatoes and fresh spinach. Perfect for weeknight dinners or special occasions, this Italian-inspired salmon recipe is packed with flavor and ready in just 30 minutes.

Ingredients

4 salmon fillets, skinless

Salt and pepper, to taste

2 tablespoons olive oil

3 tablespoons unsalted butter

4 garlic cloves, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup sun-dried tomatoes, chopped

1 teaspoon dried Italian seasoning

3 cups baby spinach

1/2 cup grated Parmesan cheese

Fresh parsley, for garnish

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat. Sear the salmon fillets for about 4-5 minutes per side or until cooked to your preference. Remove salmon from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes, until fragrant.
  4. Stir in the heavy cream, chicken broth, sun-dried tomatoes, and Italian seasoning. Let the sauce gently simmer for 3-4 minutes.
  5. Add baby spinach and Parmesan cheese, stirring until spinach wilts and cheese melts.
  6. Return salmon to the skillet, spooning sauce over the top. Let it simmer for 2-3 minutes to absorb the flavors.
  7. Garnish with fresh parsley and serve hot.

Notes

Substitute Options: You can substitute heavy cream with half-and-half for a lighter option or coconut cream for a dairy-free version.

Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stovetop with a splash of broth or cream to maintain the sauce’s consistency.

Serving Suggestions: This dish pairs beautifully with pasta, rice, or crusty bread and a side of roasted vegetables.
