Ingredients

10.5 oz (300 g) pasta

1 tablespoon olive oil

1 tablespoon (20 g) unsalted butter

1 lb (450 g) chicken breast, cut into 1-inch pieces

1 medium shallot, finely diced

4 garlic cloves, minced

1/2 tablespoon Italian seasoning

1/3 cup (75 ml) dry white wine

1 cup (200 ml) heavy cream

1/2 cup (50 g) grated Parmesan

A handful of fresh parsley, chopped

Salt and freshly ground black pepper to taste


Instructions

  1. Cook pasta according to package directions, reserving some pasta water.
  2. Heat olive oil and butter in a large pan over medium heat. Cook chicken for 5-6 minutes until done.
  3. Add shallot and cook for 1 minute, then add garlic and cook for 30 seconds.
  4. Stir in Italian seasoning, deglaze with wine, and cook for 1-2 minutes.
  5. Add cream and cook until thickened, then add pasta and toss in sauce. Adjust thickness with reserved pasta water.
  6. Stir in Parmesan and parsley, season to taste, and serve immediately.

Notes

For a lighter version, substitute heavy cream with half-and-half or milk.

To add heat, incorporate red pepper flakes or hot sauce.

Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
