Ingredients
10.5 oz (300 g) pasta
1 tablespoon olive oil
1 tablespoon (20 g) unsalted butter
1 lb (450 g) chicken breast, cut into 1-inch pieces
1 medium shallot, finely diced
4 garlic cloves, minced
1/2 tablespoon Italian seasoning
1/3 cup (75 ml) dry white wine
1 cup (200 ml) heavy cream
1/2 cup (50 g) grated Parmesan
A handful of fresh parsley, chopped
Salt and freshly ground black pepper to taste
Instructions
- Cook pasta according to package directions, reserving some pasta water.
- Heat olive oil and butter in a large pan over medium heat. Cook chicken for 5-6 minutes until done.
- Add shallot and cook for 1 minute, then add garlic and cook for 30 seconds.
- Stir in Italian seasoning, deglaze with wine, and cook for 1-2 minutes.
- Add cream and cook until thickened, then add pasta and toss in sauce. Adjust thickness with reserved pasta water.
- Stir in Parmesan and parsley, season to taste, and serve immediately.
Notes
For a lighter version, substitute heavy cream with half-and-half or milk.
To add heat, incorporate red pepper flakes or hot sauce.
Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
