Description

This creamy garlic chicken skillet is a comforting one-pan meal featuring golden-seared chicken thighs simmered in a rich garlic and thyme-infused cream sauce. It’s easy, flavorful, and perfect for pairing with mashed potatoes, pasta, or rice.


Ingredients

4 boneless, skinless chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup chicken stock

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1/2 cup heavy cream

1 tablespoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Fresh parsley, chopped (for garnish)


Instructions

  1. Season the chicken thighs generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the chicken for 4–5 minutes on each side until golden brown, then remove and set aside.
  4. Reduce the heat to medium and sauté the minced garlic for about 30 seconds until fragrant.
  5. Pour in the chicken stock, scraping up the browned bits from the bottom of the pan.
  6. Stir in the Dijon mustard and dried thyme; bring to a gentle simmer.
  7. Return the chicken to the skillet, reduce heat to low, cover, and simmer for 15 minutes until fully cooked.
  8. Stir in the heavy cream and let simmer uncovered for 3–4 minutes.
  9. If desired, add the cornstarch slurry to thicken and cook for an additional 1–2 minutes.
  10. Garnish with fresh parsley and serve hot.

Notes

Substitute chicken breasts for thighs if preferred, adjusting cook time accordingly.

For a dairy-free version, use coconut cream instead of heavy cream.

Add mushrooms or spinach for extra texture and nutrition.

To reheat, use a skillet over medium heat with a splash of stock or cream.

Let sauce simmer longer or add parmesan to thicken without cornstarch.
