Ingredients
4 boneless, skinless chicken thighs
Salt and pepper, to taste
2 tablespoons olive oil
4 cloves garlic, minced
1 cup chicken stock
1 tablespoon Dijon mustard
1 teaspoon dried thyme
1/2 cup heavy cream
1 tablespoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken thighs generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the chicken for 4–5 minutes on each side until golden brown, then remove and set aside.
- Reduce the heat to medium and sauté the minced garlic for about 30 seconds until fragrant.
- Pour in the chicken stock, scraping up the browned bits from the bottom of the pan.
- Stir in the Dijon mustard and dried thyme; bring to a gentle simmer.
- Return the chicken to the skillet, reduce heat to low, cover, and simmer for 15 minutes until fully cooked.
- Stir in the heavy cream and let simmer uncovered for 3–4 minutes.
- If desired, add the cornstarch slurry to thicken and cook for an additional 1–2 minutes.
- Garnish with fresh parsley and serve hot.
Notes
Substitute chicken breasts for thighs if preferred, adjusting cook time accordingly.
For a dairy-free version, use coconut cream instead of heavy cream.
Add mushrooms or spinach for extra texture and nutrition.
To reheat, use a skillet over medium heat with a splash of stock or cream.
Let sauce simmer longer or add parmesan to thicken without cornstarch.
