Ingredients
4–6 (6 oz.) wild lobster tails
2 Tbsps unsalted butter
1 medium onion, chopped
2 carrots, chopped
2 stalks celery, chopped
3 cloves garlic, minced
1/4 cup tomato paste
1/4 cup all-purpose flour
4 cups seafood or chicken stock
1 cup dry white wine
1 bay leaf
1 tsp paprika
1/2 tsp cayenne pepper (optional)
1 cup heavy cream
Salt and pepper to taste
Fresh chives or parsley, chopped (for garnish)
Instructions
- Prepare the lobster: In a large pot, boil water. Add lobster tails and cook for 5-7 minutes until bright red and cooked through. Remove, cool slightly, then remove meat from shells and chop into bite-sized pieces. Reserve shells.
- Make the bisque base: In the same pot, melt butter over medium heat. Add onion, carrots, and celery. Cook for 5-7 minutes until vegetables soften. Add garlic and cook another 1-2 minutes.
- Add tomato paste and flour: Stir in tomato paste and cook for 2-3 minutes. Sprinkle flour over vegetables, stirring constantly, and cook another 2 minutes.
- Add stock and wine: Slowly whisk in seafood or chicken stock and white wine. Add reserved lobster shells, bay leaf, paprika, and cayenne pepper (if using). Bring to a simmer and cook 20-25 minutes to meld flavors.
- Blend the bisque: Remove bay leaf and lobster shells. Using an immersion blender, blend soup until smooth. Alternatively, carefully transfer soup to a blender in batches and blend until smooth. Return to pot.
- Add cream and lobster meat: Stir in heavy cream and chopped lobster meat. Cook another 5-10 minutes until heated through. Season with salt and pepper to taste.
- Serve: Ladle bisque into bowls, garnish with fresh chives or parsley. Serve hot and savor the rich flavors of our Creamy Lobster Bisque!
Notes
For a richer bisque, you can add more heavy cream according to your preference.
