Ingredients

2 boneless, skinless chicken breasts, diced

8 ounces penne pasta

1 tablespoon olive oil

1 cup mushrooms, sliced

1 bunch asparagus, trimmed and cut into 2-inch pieces

3 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/4 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped

Salt and pepper to taste


Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.

  2. Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook for 5-6 minutes, or until browned and cooked through. Remove from skillet and set aside.
