Ingredients

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

1 small onion, chopped

3 cloves garlic, minced

8 oz mushrooms, sliced

1/2 cup chicken broth

1 cup heavy cream

1 teaspoon Dijon mustard

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (optional)


Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  2. Cook the chicken for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, sauté the chopped onion for 2-3 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are tender.
  4. Pour in the chicken broth and bring to a simmer, reducing the liquid slightly for about 2 minutes.
  5. Stir in the heavy cream and Dijon mustard, cooking for 2-3 minutes until the sauce thickens.
  6. Add the Parmesan cheese, stirring until melted and well combined. Return the chicken to the skillet and coat with the sauce.
  7. Cook for an additional 2-3 minutes until the chicken is heated through. Garnish with chopped fresh parsley, if desired, and serve hot.

Notes

You can substitute chicken thighs for chicken breasts if desired.

For a lighter option, substitute half-and-half for heavy cream.
