Ingredients
4 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt and pepper, to taste
1 small onion, chopped
3 cloves garlic, minced
8 oz mushrooms, sliced
1/2 cup chicken broth
1 cup heavy cream
1 teaspoon Dijon mustard
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped (optional)
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
 - Cook the chicken for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
 - In the same skillet, sauté the chopped onion for 2-3 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are tender.
 - Pour in the chicken broth and bring to a simmer, reducing the liquid slightly for about 2 minutes.
 - Stir in the heavy cream and Dijon mustard, cooking for 2-3 minutes until the sauce thickens.
 - Add the Parmesan cheese, stirring until melted and well combined. Return the chicken to the skillet and coat with the sauce.
 - Cook for an additional 2-3 minutes until the chicken is heated through. Garnish with chopped fresh parsley, if desired, and serve hot.
 
Notes
You can substitute chicken thighs for chicken breasts if desired.
For a lighter option, substitute half-and-half for heavy cream.
