Ingredients
1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 onion, finely chopped
3 cloves garlic, minced
1 cup long-grain white rice
2 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup frozen peas
1 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium-high heat. Add chicken pieces and cook until browned, about 5-7 minutes. Remove chicken from the pot and set aside.
- In the same pot, add chopped onion and minced garlic. Sauté until onion is translucent, about 3-4 minutes.
- Stir in rice to coat with the oil and onions. Pour in chicken broth and heavy cream, then bring to a boil.
- Reduce heat to low, cover the pot, and simmer for 15 minutes, or until rice is cooked and liquid is absorbed.
- Stir in grated Parmesan cheese, frozen peas, dried thyme, salt, and pepper. Return cooked chicken to the pot and stir to combine. Cook for an additional 5 minutes until chicken is heated through and rice is tender.
- Garnish with chopped fresh parsley before serving.
