Ingredients

1 tablespoon olive oil

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 onion, finely chopped

3 cloves garlic, minced

1 cup long-grain white rice

2 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup frozen peas

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken pieces and cook until browned, about 5-7 minutes. Remove chicken from the pot and set aside.
  2. In the same pot, add chopped onion and minced garlic. Sauté until onion is translucent, about 3-4 minutes.
  3. Stir in rice to coat with the oil and onions. Pour in chicken broth and heavy cream, then bring to a boil.
  4. Reduce heat to low, cover the pot, and simmer for 15 minutes, or until rice is cooked and liquid is absorbed.
  5. Stir in grated Parmesan cheese, frozen peas, dried thyme, salt, and pepper. Return cooked chicken to the pot and stir to combine. Cook for an additional 5 minutes until chicken is heated through and rice is tender.
  6. Garnish with chopped fresh parsley before serving.

Notes

Make sure to use a large enough pot to accommodate all ingredients comfortably.
