Description

Ingredients

1 1/2 pounds lean ground beef

1 medium white onion, peeled and diced

1 large garlic clove, minced

6 cups chicken broth

4 large russet potatoes, peeled and diced

2 cups carrots, sliced

2 stalks celery, diced

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and black pepper, to taste

1 1/2 cups heavy cream

2 tablespoons cornstarch (optional, for thickening)

1/2 cup shredded cheddar cheese (optional, for garnish)

Fresh parsley, chopped, for garnish


Instructions

  1. In a skillet over medium heat, brown the ground beef with the diced onion and minced garlic. Drain any excess grease.
  2. Transfer the beef mixture to the Crockpot and add the chicken broth, diced potatoes, carrots, celery, thyme, parsley, salt, and black pepper. Stir to combine.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes and vegetables are tender.
  4. About 30 minutes before serving, stir in the heavy cream. If you prefer a thicker soup, dissolve cornstarch in 2 tablespoons of cold water and stir it into the soup.
  5. Cover and cook for an additional 30 minutes, then serve hot, garnished with shredded cheddar cheese and fresh parsley.

Notes

You can substitute ground beef with ground turkey or chicken for a leaner version.

For a dairy-free option, swap the heavy cream with coconut milk or almond milk.

This soup can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months.
