Ingredients
8 oz pasta of choice
1 tablespoon olive oil
1 lb chicken breast, sliced
Salt and pepper to taste
2 tablespoons unsalted butter
4 cloves garlic, minced
1 cup cherry tomatoes, halved
2 cups spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 cup sun-dried tomatoes, chopped
Extra Parmesan cheese and fresh basil for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then cook until golden brown and no longer pink inside. Transfer to a plate and set aside.
- In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the cherry tomatoes and cook until softened.
- Stir in the spinach and cook until wilted.
- Pour in the heavy cream, add Parmesan cheese and Italian seasoning, and stir until the sauce is creamy and smooth.
- Add the sun-dried tomatoes and cooked pasta, tossing to coat evenly.
- Return the cooked chicken to the skillet and stir to combine. Let cook for a few minutes to meld the flavors.
- Serve hot, garnished with extra Parmesan cheese and fresh basil.
