Description

Creamy Tuscan Chicken Pasta is a comforting Italian-inspired dish combining tender chicken, spinach, sun-dried tomatoes, and pasta all enveloped in a rich Parmesan cream sauce.


Ingredients

8 oz pasta of choice

1 tablespoon olive oil

1 lb chicken breast, sliced

Salt and pepper to taste

2 tablespoons unsalted butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 cup sun-dried tomatoes, chopped

Extra Parmesan cheese and fresh basil for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then cook until golden brown and no longer pink inside. Transfer to a plate and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the cherry tomatoes and cook until softened.
  5. Stir in the spinach and cook until wilted.
  6. Pour in the heavy cream, add Parmesan cheese and Italian seasoning, and stir until the sauce is creamy and smooth.
  7. Add the sun-dried tomatoes and cooked pasta, tossing to coat evenly.
  8. Return the cooked chicken to the skillet and stir to combine. Let cook for a few minutes to meld the flavors.
  9. Serve hot, garnished with extra Parmesan cheese and fresh basil.

Use gluten-free pasta for a gluten-free version.

Add mushrooms or swap spinach with kale for variation.

Use half-and-half instead of heavy cream for a lighter version.

Substitute chicken with shrimp, turkey, or Italian sausage if desired.
