Description

These crispy and golden zucchini fritters are the perfect balance of lightness and flavor. Made with simple ingredients, they pack all the goodness of zucchini, making them a tasty and versatile snack or appetizer.


Ingredients

2 medium zucchinis, grated

1/2 teaspoon salt

1/2 cup all-purpose flour (or gluten-free flour)

1/4 cup grated Parmesan cheese

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1 large egg

2 tablespoons fresh parsley, chopped

2 tablespoons olive oil (for frying)


Instructions

  1. Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  2. In a medium bowl, combine the grated zucchini with salt and let it sit for 5 minutes. Squeeze out any remaining moisture.
  3. Add flour, Parmesan cheese, garlic powder, black pepper, egg, and parsley to the zucchini. Mix everything together until fully combined.
  4. Heat olive oil in a large skillet over medium heat. Once the oil is hot, scoop spoonfuls of the zucchini mixture and form small patties. Flatten each patty slightly with the back of a spoon.
  5. Cook the fritters for 2-3 minutes per side, or until golden brown and crispy.
  6. Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb excess oil.
  7. Serve hot with your favorite dipping sauce or a dollop of sour cream.

Notes

To prevent soggy fritters, ensure to squeeze out as much moisture as possible from the grated zucchini.

If making ahead, the fritter mixture can be stored in the fridge for up to 24 hours.

For a gluten-free option, substitute all-purpose flour with gluten-free flour.

Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in a skillet, toaster oven, or air fryer for best results.
