Ingredients

2 lb chicken tenders or 4 large chicken breasts

2 sleeves Ritz crackers

1/4 tsp salt

1/8 tsp pepper

1/2 cup whole milk (2% can be substituted)

3 cups cheddar cheese, grated

1 tsp dried parsley

Sauce:

10 oz can cream of chicken soup

2 tbsp sour cream

2 tbsp butter


Instructions

  1. Crush the Ritz crackers into fine crumbs. If using chicken breasts, cut each breast into three large pieces.
  2. In three separate shallow pans, pour the milk, grated cheddar cheese, and crushed crackers. Season the cracker crumbs with salt and pepper, stirring to combine.
  3. Dip each piece of chicken into the milk, then into the cheese, pressing gently to adhere, and finally into the seasoned cracker crumbs, pressing firmly to coat evenly.
  4. Arrange the coated chicken pieces in a greased 9×13 inch baking pan, ensuring they’re evenly spaced.
  5. Sprinkle dried parsley over the chicken for added flavor. Cover the pan with aluminum foil and bake at 400°F (200°C) for 35 minutes.
  6. Remove the foil and continue baking for an additional 10-15 minutes, or until the chicken is golden brown and crispy.

Sauce:

  1. In a medium saucepan, combine the cream of chicken soup, sour cream, and butter. Whisk the ingredients together over medium-high heat until the sauce is heated through and smooth.

Notes

For a gluten-free version, use gluten-free crackers and ensure the cream of chicken soup is gluten-free.

The chicken can be prepared ahead of time and refrigerated before baking for up to 24 hours.
