Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs

2 tablespoons olive oil

8 oz fettuccine pasta

1 cup heavy cream

1/2 cup unsalted butter

1 cup grated Parmesan cheese

2 cloves garlic, minced

Fresh parsley, chopped (optional)


Instructions

  1. Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper. Dredge each chicken breast in flour, dip into beaten eggs, and coat with breadcrumbs.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 3-4 minutes on each side, or until golden brown. Transfer to a baking sheet and bake for 20 minutes, or until cooked through.
  3. Cook the fettuccine pasta according to the package instructions. Drain and set aside.
  4. In the same skillet, add heavy cream, butter, and minced garlic. Cook over medium heat until the butter is melted and the mixture is hot.
  5. Stir in grated Parmesan cheese until the sauce is smooth and creamy.
  6. Add the cooked fettuccine to the sauce, tossing to coat evenly.
  7. Slice the baked chicken and place it on top of the fettuccine Alfredo. Garnish with fresh parsley if desired.
  8. Serve hot and enjoy.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the sauce.

To make the dish lighter, substitute heavy cream with half-and-half or a plant-based milk.

If the sauce thickens too much after refrigerating, add a splash of milk or cream when reheating.
