Ingredients

2 cans (15 oz each) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon ground curry powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon ground cumin

Salt and black pepper, to taste

1 tablespoon fresh lemon juice (optional, for extra zing)


Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Pat the chickpeas dry with paper towels, removing as much moisture as possible to ensure they get crispy.
  3. In a large bowl, toss the chickpeas with olive oil, curry powder, garlic powder, onion powder, smoked paprika, cumin, salt, and pepper until evenly coated.
  4. Spread the chickpeas in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the chickpeas are golden brown and crispy.
  6. Remove from the oven and let the chickpeas cool on the baking sheet for extra crispiness.

Notes

For extra crispiness, ensure chickpeas are as dry as possible before roasting.

To re-crisp, place chickpeas back in a 350°F (175°C) oven for a few minutes.
