10 oz button or cremini mushrooms, cleaned and trimmed

1 cup all-purpose flour

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

2 eggs

1/2 cup milk

1 1/2 cups panko breadcrumbs

1/2 cup grated Parmesan cheese (optional)

Oil for frying

For the Cool Ranch Dip:

1/2 cup mayonnaise

1/2 cup sour cream or Greek yogurt

1 tablespoon fresh lemon juice

1 teaspoon dried dill

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon dried parsley

1/4 teaspoon salt

1/4 teaspoon black pepper

12 tablespoons buttermilk (for desired consistency)


Instructions

  1. In a medium bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In another bowl, beat eggs with milk until smooth.
  3. In a third bowl, combine panko breadcrumbs with Parmesan cheese (optional).
  4. Dredge mushrooms in the seasoned flour, dip into egg mixture, and coat in panko breadcrumbs.
  5. Heat oil in a deep skillet or pot to 350°F (175°C) for frying.
  6. Fry mushrooms in batches for 2-3 minutes until golden and crispy. Drain on paper towels.
  7. For the dip, whisk all ranch ingredients together and adjust consistency with buttermilk.
  8. Serve fried mushrooms hot with ranch dip.
