Ingredients
1 large head of cauliflower, cut into bite-sized florets
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon smoked paprika (optional)
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley
Grated Parmesan or vegan Parmesan, for garnish (optional)
Instructions
- Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- In a large bowl, toss the cauliflower florets with olive oil, garlic, salt, pepper, and paprika (if using) until well coated.
- Spread the cauliflower in a single layer on the prepared baking sheet without overcrowding.
- Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy on the edges.
- Remove from the oven and drizzle with lemon juice.
- Sprinkle with fresh parsley and grated Parmesan, if using.
- Serve hot as a side dish or light main course.
Notes
Add red pepper flakes for a spicy kick.
Use thyme instead of parsley for an earthier flavor.
Serve with tahini or dukkah for a Middle Eastern twist.
Store leftovers in the fridge for up to 3 days and reheat in the oven for crispiness.
