Ingredients

2 lbs boneless, skinless chicken breasts or thighs

2 cups chicken broth

1 packet (1 oz) onion soup mix

1 can (10.5 oz) cream of chicken soup (or homemade substitute)

1 tsp garlic powder

1/2 tsp black pepper

1/4 tsp paprika (optional)

1/4 cup sour cream (optional, for creamier gravy)


Instructions

  1. Prepare the Crockpot: Place chicken breasts or thighs at the bottom of the crockpot.
  2. Mix the Gravy: In a bowl, whisk together chicken broth, onion soup mix, cream of chicken soup, garlic powder, black pepper, and paprika. Pour over the chicken.
  3. Cook: Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours, until chicken is tender.
  4. Shred the Chicken: Use two forks to shred the chicken directly in the crockpot, mixing it into the gravy.
  5. Optional Creamy Finish: Stir in sour cream for a richer gravy.
  6. Serve: Serve over mashed potatoes, rice, or biscuits, garnished with fresh parsley if desired.

Notes

For gluten-free, use gluten-free onion soup mix and cream of chicken soup.

To thicken the gravy, mix 1 tbsp cornstarch with 2 tbsp cold water and stir into the crockpot. Cook an additional 15 minutes.

Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
