Ingredients

For the loaf:

150 g chopped pitted dates (1 cup)

180 ml freshly squeezed orange juice (3/4 cup)

1/2 tsp baking soda

115 g unsalted butter, softened (1/2 cup)

100 g brown sugar (1/2 cup, packed)

2 large eggs

Zest of 1 orange

1 tsp vanilla extract

200 g all-purpose flour (1 1/2 cups)

50 g ground almonds (1/2 cup)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

  2. In a small saucepan, combine the chopped dates and orange juice. Bring to a simmer over medium heat, reduce the heat, and cook for 5-7 minutes until the dates soften and absorb the juice. Stir in the baking soda and let cool.

  3. In a large mixing bowl, cream the butter and brown sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in orange zest and vanilla extract.

  4. Gradually add the flour and ground almonds, mixing until just combined.

  5. Stir in the cooled date mixture until fully incorporated.

  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

  8. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
