Ingredients
1/2 cup coconut oil or softened butter
1 cup coconut sugar or brown sugar
2 teaspoons espresso powder
1 tablespoon brewed espresso or strong coffee
1 tablespoon ground flaxseed + 3 tablespoons water (or 1 egg)
1 1/2 teaspoons vanilla extract
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups spelt flour, all-purpose, or oat flour
3/4 cup dairy-free chocolate chips or chunks
Instructions
- Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together the coconut oil (or butter) and sugar until creamy.
- Mix in the espresso powder, brewed coffee, flax egg (or egg), and vanilla extract until well combined.
- Stir in the baking soda, salt, and flour until the dough just comes together.
- Fold in the chocolate chips or chunks until evenly distributed.
- Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes, until the edges are set and centers look slightly underbaked.
- Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
Notes
