Description
A luscious no-bake twist on classic tiramisu, layered with coffee-soaked ladyfingers, creamy mascarpone, and fresh raspberries for a refreshing and elegant dessert.
Ingredients
1 cup strong brewed coffee, cooled
3 tablespoons coffee liqueur (optional)
1 cup mascarpone cheese
1 cup heavy cream
1/3 cup powdered sugar
1 teaspoon vanilla extract
24 ladyfinger cookies
1 ½ cups fresh raspberries
Cocoa powder for dusting
Instructions
- In a shallow bowl, mix the brewed coffee and coffee liqueur. Set aside.
- Whip the heavy cream in a mixing bowl until soft peaks form.
- In a separate bowl, beat the mascarpone cheese with powdered sugar and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture until fully combined.
- Quickly dip each ladyfinger into the coffee mixture—do not soak too long to avoid sogginess—and layer them in the bottom of a serving dish.
- Spread half of the mascarpone mixture evenly over the ladyfingers.
- Scatter half of the fresh raspberries on top.
- Repeat the layers with the remaining dipped ladyfingers, mascarpone mixture, and raspberries.
- Dust the top generously with cocoa powder.
- Refrigerate for at least 4 hours, preferably overnight, to let the flavors meld perfectly before serving.
Notes
The coffee liqueur is optional; you can substitute with almond or hazelnut liqueur or leave it out for a kid-friendly version.
Fresh raspberries are preferred for texture and flavor, but frozen raspberries can be used if thawed and drained well.
For a chocolate twist, add dark chocolate shavings between mascarpone layers.
To lighten the dessert, substitute part of the mascarpone with Greek yogurt.
Store covered in the fridge for up to 3 days; serve chilled without reheating.
