Description

A luscious no-bake twist on classic tiramisu, layered with coffee-soaked ladyfingers, creamy mascarpone, and fresh raspberries for a refreshing and elegant dessert.


Ingredients

1 cup strong brewed coffee, cooled

3 tablespoons coffee liqueur (optional)

1 cup mascarpone cheese

1 cup heavy cream

1/3 cup powdered sugar

1 teaspoon vanilla extract

24 ladyfinger cookies

1 ½ cups fresh raspberries

Cocoa powder for dusting


Instructions

  1. In a shallow bowl, mix the brewed coffee and coffee liqueur. Set aside.
  2. Whip the heavy cream in a mixing bowl until soft peaks form.
  3. In a separate bowl, beat the mascarpone cheese with powdered sugar and vanilla extract until smooth.
  4. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  5. Quickly dip each ladyfinger into the coffee mixture—do not soak too long to avoid sogginess—and layer them in the bottom of a serving dish.
  6. Spread half of the mascarpone mixture evenly over the ladyfingers.
  7. Scatter half of the fresh raspberries on top.
  8. Repeat the layers with the remaining dipped ladyfingers, mascarpone mixture, and raspberries.
  9. Dust the top generously with cocoa powder.
  10. Refrigerate for at least 4 hours, preferably overnight, to let the flavors meld perfectly before serving.

Notes

The coffee liqueur is optional; you can substitute with almond or hazelnut liqueur or leave it out for a kid-friendly version.

Fresh raspberries are preferred for texture and flavor, but frozen raspberries can be used if thawed and drained well.

For a chocolate twist, add dark chocolate shavings between mascarpone layers.

To lighten the dessert, substitute part of the mascarpone with Greek yogurt.

Store covered in the fridge for up to 3 days; serve chilled without reheating.
