1 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon pumpkin pie spice

Cream Cheese Frosting

4 oz cream cheese, softened

¼ cup unsalted butter, softened

1 cup powdered sugar

½ teaspoon vanilla extract

¼ teaspoon cinnamon


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, eggs, oil, and vanilla until smooth.
  3. In another bowl, whisk together the gluten-free flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared baking dish, spreading it evenly.
  6. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely in the pan.
  7. In a mixing bowl, beat together softened cream cheese, butter, powdered sugar, vanilla extract, and cinnamon until smooth.
  8. Spread the frosting evenly over the cooled pumpkin squares. Cut into squares and serve.
