Ingredients
2 lbs (900g) potatoes, peeled and diced (about 1/2-inch cubes)
4 tbsp butter
1 small onion, finely chopped
3 tbsp all-purpose flour
2 cups whole milk, warmed
1 cup heavy cream
1/2 tsp garlic powder
Salt and pepper to taste
1 1/2 cups sharp cheddar cheese, shredded
1/2 cup Parmesan cheese, grated
1/4 cup breadcrumbs (optional, for topping)
2 tbsp butter, melted (for topping)
Instructions
- Preheat Oven:
Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish. - Cook the Potatoes:
- Bring a large pot of salted water to a boil.
- Add diced potatoes and cook for 8-10 minutes until slightly tender but still firm.
- Drain and set aside.
- Make the Sauce:
- In a large skillet, melt the butter over medium heat. Add onion and sauté until softened.
- Stir in the flour and cook for 1-2 minutes. Gradually whisk in warm milk and heavy cream until smooth and thickened.
- Add garlic powder, salt, and pepper. Remove from heat and stir in cheddar and Parmesan cheeses until melted.
- Assemble the Dish:
- Combine cooked potatoes with cheese sauce and transfer to the baking dish.
- Optional: Mix breadcrumbs with melted butter and sprinkle on top.
