Ingredients
1 lb ground beef (or ground turkey)
1 packet taco seasoning
3/4 cup water
1 head romaine lettuce, chopped
1 cup cherry tomatoes, halved
1/2 cup black beans, drained and rinsed
1/2 cup corn kernels (fresh, canned, or frozen)
1/2 cup shredded cheddar cheese
1/4 cup diced red onion
1/4 cup sliced black olives (optional)
1/2 cup Catalina or ranch dressing
2 cups Nacho Cheese Doritos, crushed slightly
1/4 cup chopped fresh cilantro (optional)
Instructions

In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain any excess fat.

Add the taco seasoning and water to the beef, stirring well. Let it simmer for 5 minutes until the mixture thickens, then remove it from heat and let it cool slightly.

In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, black beans, corn, shredded cheese, red onion, and black olives (if using).

Pour the dressing over the salad and toss everything together to combine.

Add the slightly cooled taco meat to the salad and toss again.
