Description

A vibrant, refreshing Dragon Fruit Sorbet made with fresh dragon fruit, lime juice, and simple syrup. This smooth, naturally dairy-free dessert is light, tropical, and perfect for a cooling treat.


Ingredients

3 cups fresh dragon fruit, cubed (about 2 large fruits)

1/2 cup granulated sugar (or coconut sugar)

1/2 cup water

1 tablespoon fresh lime juice

1 teaspoon lime zest (optional)

Pinch of salt


Instructions

  1. Place sugar and water in a small saucepan over medium heat. Stir continuously until the sugar completely dissolves, about 3–4 minutes. Remove from heat and let cool to room temperature.
  2. Add dragon fruit cubes to a blender or food processor. Pour in the cooled syrup, lime juice, lime zest (if using), and a pinch of salt.
  3. Blend until completely smooth and vibrant in color.
  4. Pour the mixture into a shallow freezer-safe container and spread evenly.
  5. Freeze for 1 hour, then stir with a fork to break up ice crystals.
  6. Continue freezing for another 2–3 hours, stirring every hour until smooth and scoopable.
  7. Let sit at room temperature for 5 minutes before serving. Scoop into bowls or cones and garnish as desired.

Notes

Store in an airtight freezer-safe container for up to 1 week.

Press parchment paper or plastic wrap directly onto the surface to prevent ice crystals.

Let sorbet sit at room temperature for 5–10 minutes before scooping.

Frozen dragon fruit can be used; thaw slightly before blending.
