Ingredients

3 ripe bananas, mashed

3 large eggs

1/4 cup honey or maple syrup (optional, for added sweetness)

1 teaspoon vanilla extract

2 1/2 cups almond flour

1 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon (optional)

1/4 cup chocolate chips or chopped nuts (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease with nonstick spray.
  2. In a large bowl, mash the bananas until smooth. Whisk in the eggs, honey or maple syrup (if using), and vanilla extract until well combined.
  3. Add the almond flour, baking soda, salt, and cinnamon (if using) to the wet ingredients. Stir until a smooth batter forms.
  4. Fold in the chocolate chips or nuts, if desired.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
