Ingredients
2 cups heavy cream
1 cup mascarpone cheese
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 1/2 cups strong coffee (cooled)
2 tablespoons coffee liqueur (optional)
1 pack Biscoff cookies (about 30 cookies)
Cocoa powder or crushed Biscoff cookies for topping
Instructions
- In a large bowl, whip the heavy cream, mascarpone, powdered sugar, and vanilla extract until stiff peaks form. Set aside.
- In a shallow bowl, combine the cooled coffee and coffee liqueur (if using).
- Quickly dip each Biscoff cookie into the coffee mixture and arrange a layer at the bottom of a 9×9-inch dish. Spread half of the mascarpone cream mixture over the cookies.
- Add another layer of dipped Biscoff cookies, followed by the remaining mascarpone mixture.
- Refrigerate for at least 4 hours or overnight to allow the flavors to meld and the tiramisu to set.
- Before serving, dust the top with cocoa powder or sprinkle with crushed Biscoff cookies.
Notes
For a non-alcoholic version, simply omit the coffee liqueur.
Can be made ahead of time and stored in the refrigerator for up to 3-4 days.
Freezes well for up to a month (without topping).
