Ingredients

45 ripe tomatoes, diced

1 small red onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh basil, chopped

2 tbsp olive oil

1 tbsp balsamic vinegar

Salt and pepper to taste

1 baguette, sliced

Extra olive oil for brushing


Instructions

  1. Preheat the oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and brush with olive oil.
  2. Toast the bread in the oven for 8-10 minutes until golden and crispy. Remove and set aside.
