Ingredients

2 cups cooked chicken, shredded

2 cups broccoli florets, steamed

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

1/2 cup mozzarella cheese

1 can (10.5 oz) cream of chicken soup

1/2 cup sour cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon paprika

1/2 cup crushed crackers or breadcrumbs

2 tablespoons melted butter


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine shredded chicken, steamed broccoli, cooked rice, cheddar cheese, mozzarella cheese, cream of chicken soup, sour cream, garlic powder, onion powder, salt, black pepper, and paprika. Mix well.
  3. Spread the mixture evenly into the prepared baking dish.
  4. In a small bowl, combine the crushed crackers (or breadcrumbs) with the melted butter and sprinkle this mixture over the casserole.
  5. Bake for 25-30 minutes or until the top is golden and bubbly.
  6. Let it sit for 5 minutes before serving.

Notes

You can use frozen broccoli, but be sure to steam it first and drain any excess water.

This casserole can be prepped in advance and baked when ready.

For a lower-carb option, swap the rice for cauliflower rice.
