Ingredients
1 lb ground beef
1 medium onion, chopped
1 can (15 oz) corn kernels, drained
1 can (8 oz) tomato sauce
1 packet taco seasoning (or 1 tablespoon homemade taco seasoning)
1 cup shredded cheddar cheese
1 box (8.5 oz) cornbread mix (such as Jiffy)
1/4 cup milk
1 large egg
1 tablespoon olive oil
1/2 cup sour cream (optional for serving)
Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and cook for 3-4 minutes until softened.
- Add ground beef and cook, breaking it apart, until browned and cooked through (about 6-8 minutes). Drain excess fat.
- Stir in corn, tomato sauce, taco seasoning, salt, and pepper. Simmer for 5 minutes, stirring occasionally.
- In a separate bowl, prepare cornbread topping: combine cornbread mix, milk, and egg. Stir until just combined.
- Spread beef mixture evenly in the prepared baking dish. Pour cornbread batter over the top and spread evenly.
- Sprinkle shredded cheddar cheese on top of cornbread.
- Bake for 25-30 minutes, until cornbread is golden and cooked through. A toothpick inserted in the center should come out clean.
- Let the casserole cool for 5-10 minutes before serving. Optionally, serve with sour cream.
