Ingredients

1 lb ground beef

1 medium onion, chopped

1 can (15 oz) corn kernels, drained

1 can (8 oz) tomato sauce

1 packet taco seasoning (or 1 tablespoon homemade taco seasoning)

1 cup shredded cheddar cheese

1 box (8.5 oz) cornbread mix (such as Jiffy)

1/4 cup milk

1 large egg

1 tablespoon olive oil

1/2 cup sour cream (optional for serving)

Salt and pepper, to taste


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook for 3-4 minutes until softened.
  3. Add ground beef and cook, breaking it apart, until browned and cooked through (about 6-8 minutes). Drain excess fat.
  4. Stir in corn, tomato sauce, taco seasoning, salt, and pepper. Simmer for 5 minutes, stirring occasionally.
  5. In a separate bowl, prepare cornbread topping: combine cornbread mix, milk, and egg. Stir until just combined.
  6. Spread beef mixture evenly in the prepared baking dish. Pour cornbread batter over the top and spread evenly.
  7. Sprinkle shredded cheddar cheese on top of cornbread.
  8. Bake for 25-30 minutes, until cornbread is golden and cooked through. A toothpick inserted in the center should come out clean.
  9. Let the casserole cool for 5-10 minutes before serving. Optionally, serve with sour cream.
