This recipe features ground beef, shredded cheddar and mozzarella cheeses, and a blend of taco seasoning and diced tomatoes. Ingredients

1 lb ground beef

8 oz macaroni pasta

1 packet taco seasoning

1 cup cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup milk

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 can (4 oz) green chiles, optional

Salt and pepper to taste

Fresh cilantro, for garnish


Instructions

  1. Cook macaroni according to package instructions; drain and set aside.
  2. In a large skillet, brown the ground beef over medium heat. Drain excess fat.
  3. Add the diced onion and minced garlic to the skillet with the beef and sauté until the onions are translucent.
  4. Stir in the taco seasoning, diced tomatoes, and green chiles (if using). Cook for 5 minutes.
  5. Lower the heat and add the cooked macaroni, milk, and cheeses to the skillet. Stir until the cheeses are melted and the mixture is well combined.
  6. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.

Notes

For a leaner option, use ground turkey or chicken instead of beef.

Adjust the taco seasoning to suit your spice preference. Add more or less depending on your taste.

Add vegetables like bell peppers or corn for extra texture and flavor.
