For the Icing:

2 cups powdered sugar

23 tablespoons milk (adjust for desired consistency)

1 teaspoon vanilla extract

Food coloring (optional)


Instructions

  1. Prepare the Cookies:
    In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
    In a large bowl, beat the softened butter and granulated sugar until light and fluffy (2-3 minutes).
    Add the egg, vanilla extract, and almond extract (if using) to the butter mixture, mixing until well combined.
    Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. The dough should be soft, not sticky.
    Divide dough into two portions, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  2. Cut and Bake:
    Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
    Roll out dough on a floured surface to about 1/4-inch thickness. Cut out shapes with cookie cutters.
    Place cut cookies onto prepared baking sheets, leaving space between each.
    Bake for 8-10 minutes or until edges turn golden. Cool on the sheets for 5 minutes, then transfer to a wire rack to cool completely.
  3. Make the Icing:
    Whisk together powdered sugar, milk, and vanilla extract until smooth. Adjust milk for desired consistency.
    Divide icing into bowls and add food coloring if desired. Decorate cooled cookies with icing, then allow them to set before serving.

Notes

The dough can be made in advance and stored in the fridge for up to 2 days.

For thicker icing, use less milk, or for a thinner consistency, add more milk.
