Ingredients

1 box (15.25 oz) spice cake mix (or yellow cake mix for a milder flavor)

1 can (15 oz) pumpkin puree

Optional: chocolate chips, raisins, or chopped nuts


Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.
  2. In a large mixing bowl, combine the cake mix and pumpkin puree. Stir until the batter is thick and smooth.
  3. If desired, fold in your choice of optional add-ins (chocolate chips, nuts, or raisins).
  4. Spoon the batter into muffin cups, filling each about 2/3 full.
  5. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  6. Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a milder pumpkin flavor, use yellow cake mix instead of spice cake mix.
