Ingredients
1 box (15.25 oz) spice cake mix (or yellow cake mix for a milder flavor)
1 can (15 oz) pumpkin puree
Optional: chocolate chips, raisins, or chopped nuts
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.
- In a large mixing bowl, combine the cake mix and pumpkin puree. Stir until the batter is thick and smooth.
- If desired, fold in your choice of optional add-ins (chocolate chips, nuts, or raisins).
- Spoon the batter into muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
