Ingredients
1 1/2 cups all-purpose flour
1/2 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves (optional)
1/4 teaspoon salt
2 large eggs
1/2 cup granulated sugar
1/2 cup honey
1/4 cup neutral oil (like vegetable or sunflower)
1/2 cup brewed black tea (cooled) or orange juice
1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease an 8-inch round or loaf pan and line it with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
- In another bowl, beat the eggs, then whisk in the sugar, honey, oil, tea (or orange juice), and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Do not overmix.
- Transfer the batter to the prepared pan and smooth the top.
- Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Optional: Dust with powdered sugar or drizzle more honey on top before serving.

For a deeper flavor, swap black tea with strong coffee.
