Ingredients
1/2 cup all-purpose flour
3/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1/4 cup unsalted butter, melted
1 tablespoon lemon zest
1/4 cup freshly squeezed lemon juice
1 1/2 cups hot water
Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the flour, sugar, baking powder, and salt in a medium-sized bowl.
- Add the milk, melted butter, lemon zest, and lemon juice to the dry ingredients. Stir until combined (the batter will be thick).
- Pour the batter into a greased 9×9-inch baking dish.
- Pour the hot water over the batter (do not stir).
- Bake for 40-45 minutes, or until the top turns golden brown and a toothpick inserted comes out clean.
- Let the cobbler cool for a few minutes before serving. The lemon sauce will form at the bottom while the top becomes soft and cakey.
