Description

Classic and tangy, these Easy Lemon Squares are made with a buttery shortbread crust and a zesty lemon filling. Perfect for gatherings or a quick dessert, this recipe delivers bold citrus flavor with simple ingredients.

Ingredients

For the Crust:

1 cup all-purpose flour

1/4 cup granulated sugar

1/2 cup unsalted butter, softened

For the Lemon Filling:

2 large eggs

3/4 cup granulated sugar

2 tablespoons all-purpose flour

1/4 teaspoon baking powder

1/3 cup freshly squeezed lemon juice (about 2 lemons)

Powdered sugar, for dusting

Instructions

  1. Prepare the Crust:
    • Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan or line with parchment paper.
    • Mix flour, sugar, and butter until crumbly. Press dough evenly into the pan.
    • Bake for 15-20 minutes or until lightly golden.
  2. Make the Lemon Filling:
    • Whisk eggs and sugar in a medium bowl until smooth.
    • Add flour, baking powder, and lemon juice, whisking until fully combined.
  3. Bake the Lemon Squares:
    • Pour the filling over the hot crust.
    • Bake for 20-25 minutes until the filling sets and edges are golden.
  4. Cool and Serve:
    • Let cool completely in the pan.
    • Dust with powdered sugar, slice into squares, and serve.

Notes

For extra tang, add lemon zest to the filling.

Substitute lime juice for a tropical variation.

Use gluten-free flour for a GF option.

Store in the refrigerator or freeze for later.
