Ingredients
2 fish fillets (cod, tilapia, or halibut)
6 sprigs fresh thyme, chopped
3 sprigs fresh rosemary, chopped
1 teaspoon dried oregano
2 teaspoons parsley, chopped or dried
1 cup cherry tomatoes, halved
½ cup olives, pitted
1 medium onion, diced
1 zucchini, diced
Olive oil
Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Place the fish fillets in a baking dish.
- Sprinkle the chopped thyme, rosemary, dried oregano, and parsley over the fish.
- Arrange the cherry tomatoes, olives, diced onion, and zucchini around the fish in the baking dish.
- Drizzle with olive oil and season with salt and pepper to taste.
- Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Serve hot, garnished with additional parsley if desired.
Notes
For best results, use fresh herbs. If using dried herbs, adjust the quantity as dried herbs are more concentrated.
You can substitute olives with capers or artichoke hearts if desired.
