Description

These easy peanut butter no-bake cookies are chewy, naturally sweetened, and packed with rich peanut butter flavor. Made with simple pantry ingredients, they’re gluten-free, customizable, and take less than 10 minutes to prepare without turning on the oven.


Ingredients

1/2 cup natural peanut butter

1/4 cup coconut oil or butter

1/4 cup maple syrup or honey

1/2 teaspoon pure vanilla extract

1/4 teaspoon salt

1 1/2 cups quick oats

Optional: 2 tablespoons cocoa powder

Optional: 2 tablespoons shredded coconut or mini chocolate chips


Instructions

  1. In a medium saucepan over low heat, combine the peanut butter, coconut oil (or butter), and maple syrup (or honey). Stir constantly until melted and smooth.
  2. Remove the pan from heat and stir in the vanilla extract and salt.
  3. Add the oats and mix until well combined. Stir in optional cocoa powder, coconut, or chocolate chips if using.
  4. Use a spoon to scoop portions onto a parchment-lined baking sheet and gently flatten into cookie shapes.
  5. Refrigerate the cookies for at least 30 minutes, or until firm.

Notes

Store in an airtight container in the fridge for up to one week or freeze for up to three months.

Let cookies sit at room temperature for 5–10 minutes before eating if frozen.

Use sunflower seed butter for a nut-free version.

Add protein powder for an extra nutritional boost.
