Ingredients
For the crust:
1 1/2 cups all-purpose flour

For the filling:
1 cup light corn syrup
3/4 cup packed brown sugar
1/4 cup unsalted butter, melted
2 teaspoons vanilla extract
1/4 teaspoon salt
3 large eggs
2 cups pecan halves or chopped pecans
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or lightly grease it.
- In a medium bowl, combine flour, sugar, and salt for the crust. Add the cold, cubed butter and cut it into the dry ingredients until the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the prepared pan to form a firm, even layer. Bake for 12-15 minutes, or until lightly golden. Remove from the oven and set aside to cool.
- While the crust is cooling, make the pecan filling by whisking together the corn syrup, brown sugar, melted butter, vanilla, and salt in a large bowl. Add the eggs one at a time, mixing well after each addition.
- Stir in the pecans, then pour the filling over the pre-baked crust, spreading it out evenly.
- Bake for an additional 25-30 minutes, or until the filling is set and golden brown around the edges. Let cool completely before cutting into bars.
- Slice into squares and serve.
