Ingredients
2 large sweet potatoes, peeled & cut into small cubes
2 tbsp olive oil
1/2 tsp paprika (optional)
1/2 tsp garlic powder (optional)
Black pepper to taste

Instructions
- Preheat the oven to 425°F (220°C).
- Toss the sweet potato cubes with olive oil, paprika, garlic powder, and black pepper until evenly coated.
- Spread the cubes out on a baking sheet in a single layer, making sure not to overcrowd them.
- Roast for 25-30 minutes, flipping halfway through, until the edges are golden and crispy.
- Sprinkle fresh parsley over the sweet potato bites before serving.
Notes
Optional: Drizzle honey or maple syrup before roasting for extra caramelization or sprinkle cinnamon for a sweet twist.
After baking, add feta or goat cheese for a savory note.
Serve with dipping sauces like ranch, yogurt dip, or spicy mayo.
