Ingredients
1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1 1/3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup graham cracker crumbs (about 6 full graham crackers)
1 cup semi-sweet chocolate chips
1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and graham cracker crumbs. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chocolate chips and mini marshmallows.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, or until the edges are lightly golden and the marshmallows are gooey.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
