Ingredients

4 large bell peppers (any color)

1 lb lean ground beef

1 cup cooked brown rice

1 small onion, chopped

2 cloves garlic, minced

1 cup tomato sauce

½ cup shredded cheddar cheese (optional)

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers, remove seeds and membranes.
  3. Heat olive oil in a skillet. Add onion and garlic, sauté for 2-3 minutes.
  4. Add ground beef and cook until browned. Drain excess fat.
  5. Stir in brown rice, tomato sauce, oregano, smoked paprika, salt, and pepper. Simmer for 5 minutes.
  6. Stuff the mixture into the bell peppers and place them in a baking dish.
  7. Top with cheddar cheese (optional), cover with foil, and bake for 30 minutes.
  8. Remove foil and bake for another 10 minutes until peppers are tender and cheese is melted.
  9. Garnish with parsley and serve.

Notes

You can swap ground beef for ground turkey or chicken.

For a vegetarian option, use lentils or black beans instead of meat.

Adjust the seasonings or add hot sauce for extra flavor.
