1 cup butter or margarine, softened
1 cup sugar
1 large egg
1 teaspoon vanilla extract
2 teaspoons baking powder
2 3/4 cups all-purpose flour
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or grease them lightly.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Roll the dough into 1-inch balls and place them on the prepared baking sheets, spaced about 2 inches apart. Optionally, flatten the balls with a fork or use cookie cutters for fun shapes.
- Bake for 6-8 minutes, or until the edges are lightly golden.
- Allow the cookies to cool for 2-3 minutes on the baking sheet before transferring them to a wire rack to cool completely.
- Decorate with icing or sprinkles if desired.
