Ingredients

1 1/2 cups all-purpose flour

1 cup granulated sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1/2 cup whole milk

1/4 cup sour cream


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper cupcake liners.

  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.

  3. In a large bowl, beat the softened butter with an electric mixer until light and fluffy, about 3 minutes.

  5. Add the dry ingredients in three parts, alternating with the milk and sour cream. Start and end with the dry ingredients. Mix until just combined.

  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  8. Remove the cupcakes from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

For a chocolate variation, substitute 1/2 cup of flour with unsweetened cocoa powder.
