Description

Ingredients

2 tablespoons olive oil

1 onion, chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional)

3 cups cooked chicken, shredded

2 cans (15 oz each) white beans, drained and rinsed

1 can (4 oz) diced green chilies

4 cups chicken broth

1 cup frozen corn kernels

1/2 cup heavy cream or sour cream

Salt and pepper to taste

Fresh cilantro, for garnish (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sautéing for 3-4 minutes until softened.
  2. Stir in ground cumin, chili powder, paprika, and cayenne (if using), cooking for about 30 seconds until fragrant.
  3. Add shredded chicken, white beans, green chilies, and chicken broth. Bring to a simmer and cook for 15-20 minutes.
  4. Stir in frozen corn and heavy cream or sour cream. Simmer for an additional 5 minutes.
  5. Season with salt and pepper to taste. Garnish with fresh cilantro, if desired.
  6. Serve hot with tortilla chips or cornbread on the side.

Notes

You can adjust the spice level by adding more cayenne or a chopped jalapeño.

This recipe can be made in a slow cooker; cook on low for 4-6 hours or high for 2-3 hours, adding cream or sour cream in the last 30 minutes.
