Ingredients
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional)
3 cups cooked chicken, shredded
2 cans (15 oz each) white beans, drained and rinsed
1 can (4 oz) diced green chilies
4 cups chicken broth
1 cup frozen corn kernels
1/2 cup heavy cream or sour cream
Salt and pepper to taste
Fresh cilantro, for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sautéing for 3-4 minutes until softened.
- Stir in ground cumin, chili powder, paprika, and cayenne (if using), cooking for about 30 seconds until fragrant.
- Add shredded chicken, white beans, green chilies, and chicken broth. Bring to a simmer and cook for 15-20 minutes.
- Stir in frozen corn and heavy cream or sour cream. Simmer for an additional 5 minutes.
- Season with salt and pepper to taste. Garnish with fresh cilantro, if desired.
- Serve hot with tortilla chips or cornbread on the side.
Notes
You can adjust the spice level by adding more cayenne or a chopped jalapeño.
