1/2 cup unsalted butter, softened
2 cups powdered sugar
2–4 tbsp eggnog
1 tsp vanilla extract
1/2 tsp ground nutmeg
Instructions
- Preheat your oven to 350°F (175°C) and grease a bundt pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the eggnog, vanilla extract, and nutmeg.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for about 10 minutes, then carefully remove it and let it cool completely on a wire rack.
- For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, mixing on low speed until combined.
- Add the eggnog, vanilla extract, and nutmeg, mixing until smooth. Adjust the consistency with more eggnog if necessary.
