Description

Ingredients

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup packed light brown sugar

1/4 cup eggnog

1 large egg yolk

1/2 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground nutmeg

Optional: pinch of cinnamon

Optional glaze: 1/2 cup powdered sugar + 1–2 tbsp eggnog


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg yolk, eggnog, and vanilla extract until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, salt, nutmeg, and optional cinnamon.
  5. Gradually mix the dry ingredients into the wet mixture until just combined. Do not overmix.
  6. Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing about 2 inches apart.
  7. Bake for 10–12 minutes, or until the edges are set and the centers look soft but not wet.
  8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. For the optional glaze, whisk together powdered sugar and eggnog until smooth, then drizzle over cooled cookies.

Notes

Add a pinch of cinnamon or a dash of cloves for deeper spice.

Substitute the egg yolk with a whole egg for a cakier texture.

Top with festive sprinkles after glazing for a fun, holiday look.

Use spiced eggnog or add a splash of rum extract for bolder flavor.
