Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/4 cup eggnog
1 large egg yolk
1/2 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground nutmeg
Optional: pinch of cinnamon
Optional glaze: 1/2 cup powdered sugar + 1–2 tbsp eggnog
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg yolk, eggnog, and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, salt, nutmeg, and optional cinnamon.
- Gradually mix the dry ingredients into the wet mixture until just combined. Do not overmix.
- Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing about 2 inches apart.
- Bake for 10–12 minutes, or until the edges are set and the centers look soft but not wet.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- For the optional glaze, whisk together powdered sugar and eggnog until smooth, then drizzle over cooled cookies.
Notes
Add a pinch of cinnamon or a dash of cloves for deeper spice.
Substitute the egg yolk with a whole egg for a cakier texture.
Top with festive sprinkles after glazing for a fun, holiday look.
