Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
1 cup shredded cheddar cheese
1/4 cup fresh cilantro, chopped (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add sliced bell peppers and onions, sautéing for 5-7 minutes until soft and slightly caramelized. Remove and set aside.
- In a small bowl, mix chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
- Carefully cut a pocket into each chicken breast. Rub the seasoning mixture onto the outside of the chicken, then stuff with sautéed peppers and onions and a little shredded cheese.
- Place stuffed chicken breasts in a greased baking dish and bake for 25-30 minutes, until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before serving. Garnish with fresh cilantro, if desired.
