Ingredients

1 lb medium shrimp, peeled and deveined

1 tablespoon pure olive oil

2 tablespoons garlic, finely chopped

1 1/2 cups white wine (Chardonnay recommended)

1/2 fresh lemon, juice only

1 teaspoon Italian seasoning

1/2 cup softened butter

1 tablespoon parsley, chopped

1/2 cup grated Parmesan cheese

Salt and pepper to taste


Instructions

  1. Cook the Shrimp: Heat olive oil in a cast iron skillet over medium heat. Add shrimp and cook until tender and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
  2. Prepare the Sauce: In the same skillet, sauté garlic until fragrant but not browned, about 2-3 minutes. Add white wine and lemon juice, and cook until the wine is reduced by half, about 5 minutes.
  3. Finish the Sauce: Add Italian seasoning and stir. Reduce heat to low, then add softened butter, stirring until melted and smooth.
  4. Combine and Serve: Return shrimp to the skillet, coat with the sauce, and stir in parsley. Season with salt and pepper. Sprinkle Parmesan cheese on top.
  5. Serve: Enjoy the shrimp scampi hot with crusty bread, over pasta, or with your preferred side.

Notes

For a non-alcoholic version, substitute white wine with chicken or vegetable broth.

To make dairy-free, use a dairy-free margarine and omit Parmesan cheese.
